Father G’s Pumpkin Loaf ©

Bakes 3 or 4 loaves!

Delicious Plant-Based Treat – Freezes Well! Great for Gifts!

4 cups white sugar (don’t skimp!)
1-28 ounce tinned pure pumpkin puree (no spices)
1 cup vegetable oil
5 cups white flour
4 tsp. baking soda
1 tsp. salt
1 large Tbsp. cinnamon
1 tsp. each of nutmeg, ginger, cloves, cardamom, mace, allspice or any combination of them
2 cups of whatever combination of dried fruit and nuts you prefer (walnuts, pecans, raisins, currants, cranberries, candied ginger etc.)

Preheat oven to 350 F

  • In a large bowl blend together sugar, pumpkin, oil and fruit/nut combination
  • In a separate bowl sift together flour, soda ,salt and spices
  • Add dry ingredients to wet mixture, mix thoroughly until completely smooth
  • Divide into 3 or 4 greased loaf tins
  • Smooth tops with a lightly oiled spatula or hand
  • Sprinkle with sugar on top

Bake in middle of the oven for approximately 1  to  1.25  hours, or until an inserted wooden skewer comes out clean without any residue batter sticking on it. Do not underbake!!
