Sweet’n Savory Irish Beer Bread

This is a revised version of an Irish Soda Bread recipe I sent to the parish years ago, for our online cookbook.

  • 3 cups flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 Heaping Tbsp. sugar
  • 1 tsp. salt
  • 1 Tbsp. onion powder (not salt)
  • 1 Tbsp. dried oregano
  • 1 Tbsp. dried savory
  • 1 Tbsp. dried thyme
  • 1 can of 12 oz beer at room temperature. (Use any kind of beer, but do *not* use light beer!)
  • 1 Tbsp. olive oil

Mix everything well together. Bake for 1 hour in preheated 350 degree oven in a greased loaf pan. Serves 6.

Today I used a cake pan that is 6.5 inches across and 3 inches deep, and baked the bread for 45 minutes in the pan, and then removed it from the pan and placed it back directly into the oven, on the oven racks, as is, and baked it for another 15 minutes.

Do not under-bake this loaf. It needs an hour’s baking for the crust to caramelize. So good!
