Byzantine Pudding

Can be used for an Eve of Nativity Dish, or a Memorial Sweet Rice Dish to be blessed at a Pannykhida, makes approximately 18-20 small portions. May also be enjoyed as a delicious breakfast or dessert, to serve 4.

  • 1 & 1/2 cups of COOKED rice (still warm)
  • 1/2 cup ground or chopped pecans or almonds
  • 1/3 cup golden raisins
  • 1/3 cup liquid honey
  • 2 Tbsp. fresh minced mint
  • 2 Tbsp. fresh minced parsley
  • 1 tsp. cinnamon
  • 1/4 tsp. ground nutmeg (optional)
  • 1 Tbsp. orange brandy (optional)
  • 1/4 tsp poppy seeds (optional)
  • 1 tsp. orange or lemon zest (optional)
  • Combine all ingredients together, mixing well.
  • Transfer into a fancy serving bowl.
  • Serve at room temperature.
