Can be used for an Eve of Nativity Dish, or a Memorial Sweet Rice Dish to be blessed at a Pannykhida, makes approximately 18-20 small portions. May also be enjoyed as a delicious breakfast or dessert, to serve 4.
- 1 & 1/2 cups of COOKED rice (still warm)
- 1/2 cup ground or chopped pecans or almonds
- 1/3 cup golden raisins
- 1/3 cup liquid honey
- 2 Tbsp. fresh minced mint
- 2 Tbsp. fresh minced parsley
- 1 tsp. cinnamon
- 1/4 tsp. ground nutmeg (optional)
- 1 Tbsp. orange brandy (optional)
- 1/4 tsp poppy seeds (optional)
- 1 tsp. orange or lemon zest (optional)
- Combine all ingredients together, mixing well.
- Transfer into a fancy serving bowl.
- Serve at room temperature.
